I’m sure many of you have been seeing this “homemade” food movement unfold before us, whether it’s butter, sourdough bread, etc. Initially I was a bit intimidated because it seemed like it had to be difficult but I’m here to tell you – making homemade butter is so simple! I do have a KitchenAid Mixer which helps significantly, so I’m not doing it the old fashion way… but I am fine with that. I wanted to share the steps so that you could really understand how easy it is, and it’s so fresh and yummy!
First, start out by buying a pint of high quality heavy cream, I use Strauss Organic Heavy Cream and it creates a delicious butter. To start, put your flat beater attachment onto your stand mixer (not the whisk), pour your pint of cream into your mixer (I put my bowl shield on right away to avoid any splashing), put the mixer on a medium speed for about a minute, and once it starts to thicken a little bit – increase the speed to medium-high. After about five minutes, you’ll start to notice the seperation starting to occur, once this starts is when it will spray ALL OVER if you don’t have a lid, so throw a towel over to minimize the mess. Once the buttermilk and the butter have completely separated, stop the mixer.
Next, place a strainer over a large bowl (I also use cheese cloth over the strainer), and pour your buttermilk and butter into the strainer. Once the liquid has gone through to the bowl, squeeze the butter in the cheesecloth till all of the liquid comes out. After the butter is completely strained of liquid, submerge it into a bowl of ice water and massage it around to be sure all the buttermilk is cleaned out. Remove it from the water and dab it dry. Next, fold in sea salt and any herbs you’d like to flavor your butter with. Then, shape it, wrap it in a wax paper, and you’re all done… Enjoy the most delicious butter you’ll ever have!

– Heavy Cream (try to get one with a high milk fat %)
– Any herbs you’d like to add
